Chicken Vegetable Stir Fry

Ingredientes

  • 1 1/2 teaspoon peanut or possibly vegetable oil, divided
  • 2 tbsp. green onion
  • 2 garlic cloves, chopped
  • 1/2 c. sliced mushrooms
  • 1/4 c. red bell pepper strips
  • 1/2 c. broccoli
  • 1/2 teaspoon sesame oil
  • 1/2 pound chicken cutlets, cut into 1/4 inch thick strips
  • 2 teaspoon soy sauce
  • 1 c. cooked long grain rice

Direcciones

  1. In small skillet, heat 1/2 tsp. oil over high heat. Add in onion and garlic, saute/fry till onion is tender, 2 to 3 min. Add in vegetables and cook, stirring quickly and frequently till tender crisp, 2 to 3 min. Remove vegetables from pan and set aside.
  2. In same pan, heat together sesame oil and remaining tsp. peanut oil. Add in chicken and stir fry till chicken begins to brown, 3-5 min. Return vegetables to skillet, add in soy sauce and cook, stirring constantly, till heated through, 1 to 2 min longer. Serve with warm rice. Serves 2.
