- Mince chicken very finely. Add in corn starch and salt to chopped chicken.
- mix. Carefully add in water to chopped chicken mix a few drops at a time till it is absorbed.
- Beat egg whites till very stiff. Carefully fold chicken mix into egg whites.
- Place 2 Tbsp. oil in wok. Heat wok up under low medium heat for about 2 min. Carefully pat egg white mix into the wok.
- Reduce heat to low setting. Cook, uncovered, in wok about 15 min till omelette is set. Carefully loosen omelette, flip to reverse side and cook a further 10 min. Remove to a serving platter.
- NOTE: If you like, omelette may be served with gravy from next recipe.
