Chicken with artichokes

This is a fairly easy recipe that's quick enough for week-night company. We keep all of the ingredients ready in the pantry and freezer. Serve it with a green salad, crispy bread and a simple dessert and expect rave reviews.

Ingredientes

  • 1 pound chicken breast cubed
  • 1 8 oz box button mushrooms quartered
  • 1/4 of an onion chopped
  • olive oil for sauting
  • 3-4 sundried tomatoes slivered
  • 1 can chicken broth
  • 2 jars marinated artichokes
  • 1 teaspoon italian seasoning
  • 2 teaspoons chopped garlic
  • 1/4 teaspoon salt and black pepper
  • 2 Tablespoons cornstarch and 2 Tablespoons water
  • 1/2 box of shell shaped pasta cooked according to directions on the box
  • 1/2 cup shredded parmesan cheese

Direcciones

  1. Start a pot of water for the pasta.
  2. Put some olive oil in the bottom of a skillet and turn it on medium.
  3. Brown the chicken lightly.
  4. Drain the marinade from the artichokes into the skillet.
  5. Add the broth and all other ingredients except the artichokes and cornstarch solution to the skillet and bring it to a simmer.
  6. Simmer until the chicken is done.
  7. Add the cornstarch and simmer to thicken.
  8. Gently fold the artichokes into the dish.
  9. Drain the pasta and place on a large serving platter.
  10. Pour the chicken mixture onto the pasta.
  11. Sprinkle with the parmesan cheese.
