Chicken with Bleu Cheese, Mushrooms & Camelized Onions

This dish goes together very quickly, it's very flavorful and takes chicken up a notch!

Ingredientes

  • Boneless, Skinless, Chicken Breasts
  • Sliced Mushrooms
  • Sliced Yellow Onion
  • Crumbled Bleu Cheese
  • White Wine
  • 1 Tsp. sugar
  • 2 Tbsp. Olive Oil
  • Salt & Pepper to taste

Direcciones

  1. Preheat oven to 325 degrees.
  2. Heat olive oil in a large skillet, salt and pepper chicken breasts and add to skillet. Brown on both sides.
  3. Transfer browned chicken to pan in oven to finish cooking while you finish the rest of the dish.
  4. Add sliced onions to the skillet and saute until translucent, add sugar and continue to cook until carmelized, set aside.
  5. Add mushrooms to the skillet and saute.
  6. Remove chicken breasts from oven and top with some carmelized onions and mushrooms, add crumbled blue cheese and place under the broiler until cheese is slightly melted or browned. Deglaze skillet with some white wine (you can add a tablespoon of butter if you desire).
  7. Plate chicken breasts and top with the juices from the skillet deglazing.
  8. I serve on a bed of angel hair pasta.
