Ingredientes

  • 4 Tbsp. Extra virgin olive oil Serving-pcs of chicken fo
  • 1 x Green pepper, minced
  • 2 lrg tomatoes, peeled, seed
  • 2 1/2 c. Chicken broth
  • 1/4 c. Raisins
  • 1/4 tsp Nutmeg
  • 1/4 tsp Cinnamon
  • 1/4 tsp Pepper Grated rind of 1 orange
  • 1/4 c. Light rum
  • 2 x Cloves garlic, chopped
  • 1 x Onion, minced
  • 3 slc canned pimento, chopp
  • 2 Tbsp. Chili pwdr (or possibly to taste)
  • 1/4 c. Slivered almonds
  • 1/2 tsp Cumin
  • 1/4 tsp Grnd cloves
  • 1/2 tsp Salt
  • 1 tsp Sugar
  • 2 sqr bitter chocolate, ch

Direcciones

  1. In casserole, heat oil and cook garlic for a few moments to flavour oil; add in chicken and brown. Remove chicken. In remaining fat, cook onion, green pepper, pimento, and tomato over gentle heat for 10 min. To onion mix, add in chili pwdr, blending well. Add in broth, almonds, raisins, seasonings, and rind; simmer, covered, 30 min longer. Add in chocolate, stirring till melted. Replace chicken, spooning sauce over. Bake, covered, at 350 degrees for 1 hour, or possibly till chicken is tender. Hot rum, ignite it, and pour over contents of casserole; allow to stand for a few min.
