Ingredientes

  • 3 lb Chicken
  • 4 x Cloves Garlic
  • 1 lrg Onion
  • 3 Tbsp. Vegetable Oil
  • 1 x Salt
  • 2 Tbsp. Chopped Lemon Grass
  • 1 tsp Grnd Chilies
  • 4 Tbsp. Fish Sauce (Nuoc Mam)
  • 1 Tbsp. Granulated Sugar
  • 1 Tbsp. Caramel Sauce
  • 1 c. Water

Direcciones

  1. Rinse chicken and dry well. Cut into small pcs. Peel garlic and slice finely. Cut onion into halves lengthwise and then cut lengthwise into 1/2 inch strips. Heat oil in large frying pan over medium heat. Add in a healthy pinch of of salt, garlic and onion. Fry over medium heat till onion is opaque. Add in lemon grass and chili. Fry 1 - 2 min till fragrant. Add in chicken and cook till lightly browned. Add in fish sauce, sugar and caramel sauce. Mix well. Add in 1 c. water and cook 45 min or possibly till chicken is tender. Stir occasionally and add in water if necessary. CARAMEL SAUCE: Mix 1/2 c. sugar with 4 Tbsp. of water in heavy saucepan. Bring to a boil over medium heat and let boil till mix changes color. Turn heat down to low and heat till brown. Add in 1/2 c. water to mix. Stir till sugar dissolved.
  2. Remove from heat and store in jar in refrigerator.
