Receta Chicken With Long Rice Soup

- Cover chicken with water. Add in ginger and 1 tsp. salt. Simmer till chicken is tender (45-60 min). Cold. Bone chicken and cut into bite-size pcs. Cover long rice with hot water and let stand 1/2 hour, drain and cut in 4 inch lenths. Remove ginger from broth. Add in long rice, green onion, remaining salt, pepper and chicken. Bring to a boil and simmer 10 min. Garnish with additional minced onion, if you like.
