Chicken With Rosemary Roasted Vegetables

Ingredientes

  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. balsamic vinegar
  • 1 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1/2 tsp dry crumble rosemary
  • 1/2 pkt sugar substitute
  • 1 whl chicken - (abt 3 1/2 lbs) cut 8 pcs
  • 1 c. small cauliflower florets
  • 1 c. small broccoli florets
  • 1 sm red pepper cut in 2 pcs

Direcciones

  1. Heat oven to 400 degrees. In a large bowl, combine extra virgin olive oil, vinegar, salt, pepper, rosemary, and sugar substitute. Add in chicken and vegetables. Toss till well coated.
  2. Arrange chicken, skin-side up in a jelly roll pan. Place vegetables, in a single layer, around chicken. Roast 40 min, till chicken is cooked through and browned. Halfway through cooking time, flip vegetables over with a spatula.
  3. This recipe yields 4 servings.
