- Make pilaf according to package directions; stir in beans. Cover; set aside.
- Meanwhile, sprinkle both sides of chicken with pepper and salt. Heat oil in large nonstick skillet over medium-high heat; add in chicken and cook 5 min. Turn chicken, reduce heat and cook 6 to 7 min more, till cooked through. Transfer to platter; cover and keep hot.
- Add in diced tomatoes and chiles to skillet; cook 3 to 4 min till slightly thickened.
- Divide pilaf and beans among 4 plates; top each with chicken. Divide tomato mix and lowfat sour cream over chicken.
