Ingredientes

  • 2-3 lbs. chicken
  • 1 med. onion, sliced
  • 1 1/2 teaspoon salt
  • 1/2 c. sliced celery
  • 1/2 teaspoon curry
  • 2 Packages long grain and wild rice with seasonings (6 ounce. size)
  • 1/4 c. butter
  • 1 pound sm. mushrooms
  • 1 c. cream of mushroom soup
  • 1 c. lowfat sour cream

Direcciones

  1. Put chicken with 1 c. water, celery, onion, salt and curry pwdr in pot and simmer for 1 hour. Remove chicken, strain broth and cook the rice using the broth instead of water, adding sufficient water to make required amount.
  2. Saute/fry mushrooms in butter, adding chicken meat that has been cut into bite size chunks. Blend soup and lowfat sour cream and add in to chicken and mushrooms. Put into a 4 qt casserole dish with cover. Bake 1 hour at 350 degrees. Let stand 15 to 20 min before serving. This recipe is really good!
