Receta Chickpea Apple Tart
We don't usually associate the three words chickpea, apple and tart. However, this light dessert treat is made with chickpea flour so it is rich in protein. The cinnamon, apples and agave give it a sweet "desserty" flavor and make it just right for a light after-dinner treat.

- Prepare the "frittata" mixture by heating the oven to 500 degrees F. Add 1 tablespoon olive oil to a 9 inch cast iron skillet or other oven-safe baking dish and rub around to coat the bottom and sides. Heat the skillet for about 5 minutes in the oven.
- Place the chickpea flour in a large bowl and mix in the water, remaining olive oil and a pinch of salt. Set aside.
- In a medium saucepan combine the chopped apples, 1 teaspoon of cinnamon and the Earth Balance.
- Heat the apples until the "butter" is melted and the apples are tender.
- Mix the remaining cinnamon and the agave into the "frittata" batter and pour the batter into the cast-iron skillet.
- Slowly spoon in the apple mixture, distributing the apples throughout the "tart" (notice how we went from "frittata" to "tart" there?)
- Bake according to the chickpea frittata directions (see link), then remove from oven and spread the apple or apricot preserves over the top. Allow the "tart" to cool for about 10 minutes or more before cutting.
- Serve with non-dairy whip or vegan vanilla ice-cream.
