Chickpeas Pasta Soup Recipe
Ingredients:
- Pasta – 1/4 cup
- Chickpeas – 3/4 cup, cooked
- Tomato – 1, seeded, chopped
- Garlic – 1 clove, minced
- Olive Oil – 1/2 tblsp
- Onion – 1, small, chopped
- Vegetable Stock – 2 cups
- Black Pepper Powder as per taste
- Parmesan Cheese – 2 to 3 tblsp, grated
- Basil Leaves – 1 tblsp, finely chopped
- Rosemary – 1 sprig
Method:
1. Heat oil in a pot.
2. Saute the onions and rosemary for 5 minutes.
3. Add garlic, tomatoes and cook for another 5 minutes.
4. Add the chickpeas and mash slightly.
5. Pour the vegetable stock and bring to a boil.
6. Add the pasta and cook till tender and done.
7. Garnish with cheese and basil leaves.
8. Serve hot.
