.%20And%20the%2012th%20day%20of%20Christmas%20is%20January%205th.%20Today%20is%20Epiphany%20and%20marks%20the%20day%20the%20wise%20men%20met%20the%20Christ%20child%20and%20bestowed%20Him%20with%20gifts%20of%20gold,%20frankincense,%20and%20myrrh.%20After%20today,%20my%20Christmas%20season%20will%20be%20over.%3C/p%3E%3Cp%3EI%20finally%20got%20my%20camera%20back%20from%20the%20shop%20and%20what%20is%20the%20first%20thing%20I%20photographed?%20Christmas%20Cookies.%20My%20camera%20had%20to%20have%20its%20aperture%20control%20unit%20replaced%20(for%20the%20second%20time)%20and%20I%20have%20only%20had%20it%20for%20two%20years.%20Meanwhile,%20it%20went%20on%20quite%20an%20adventure--two%20local%20places,%20then%20on%20to%20Arizona,%20then%20Connecticut,%20and%20finally%20back%20home.%20It%20now%20seems%20perky,%20clean,%20and%20ready%20to%20go.%3C/p%3E%3Cp%3E(Phone%20photo)%3C/p%3E%3Cp%3EOnce%20our%20favorite%20girl%20was%20out%20of%20school%20for%20the%20holidays,%20she%20came%20and%20spent%20a%20few%20days%20with%20us%20so%20we%20could%20bake%20cookies.%20The%20first%20one%20was%20a%20basic%20sugar%20cookie.%20She%20did%20all%20the%20measuring%20and%20mixing,%20I%20just%20supervised.%20While%20the%20dough%20was%20mixing,%20we%20made%20a%20mixture%20of%20sugar%20and%20red%20sprinkles%20to%20roll%20them%20in..%20I%20scooped%20out%20the%20dough,%20then%20she%20rolled%20it%20into%20balls%20and%20then%20into%20the%20sugar.%20Perfect%20job%20for%20little%20hands.%3C/p%3E%3Cp%3EWe%20made%20more%20cookies%20and%20goodies%20than%20what%20is%20shown%20here,%20but%20they%20have%20been%20eaten/given%20away%20by%20now.%3C/p%3E%3Cp%3EShe%20kept%20telling%20me%20she%20wanted%20to%20make%20shape%20cookies,%20so%20shape%20cookies%20it%20was.%20Once%20again,%20she%20measured%20and%20mixed%20and%20I%20supervised.%20We%20made%20a%20cookie%20dough%20which%20can%20be%20rolled%20out%20right%20away%20without%20needing%20to%20be%20chilled.%20We%20rolled%20it%20out%20on%20sheets%20of%20parchment%20(she%20is%20also%20getting%20quite%20accomplished%20with%20the%20rolling%20pin)%20and%20slipped%20the%20sheets%20onto%20the%20baking%20pan.%3C/p%3E%3Cp%3EEasier%20cutting%20is%20achieved%20if%20the%20dough%20is%20chilled%20after%20it%20is%20rolled%20out.%20We%20just%20sat%20a%20pan%20of%20dough%20outside%20for%20a%20few%20minutes%20while%20we%20rolled%20out%20the%20next%20batch.%20Once%20the%20dough%20is%20chilled,%20it%20cuts%20beautifully,%20with%20sharp%20edges.%3C/p%3E%3Cp%3EShape%20Cookies%3C/p%3E%3Cp%3E1%20cup%20butter,%20softened%3C/p%3E%3Cp%3E1%20cup%20sugar%3C/p%3E%3Cp%3E1%20egg%3C/p%3E%3Cp%3E1%20tsp.%20vanilla%3C/p%3E%3Cp%3E2%20tsp.%20baking%20powder%3C/p%3E%3Cp%3E1/2%20tsp.%20salt%3C/p%3E%3Cp%3E3%20cups%20flour%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EBeat%20butter%20and%20sugar%20until%20creamy.%20Beat%20in%20egg,%20vanilla,%20baking%20powder,%20and%20salt%20until%20well%20combined.%20Add%20flour,%20one%20cup%20at%20a%20time,%20mixing%20until%20combined%20after%20each%20addition.%3C/p%3E%3Cp%3EDivide%20dough%20into%20thirds%20and%20roll%20onto%20a%20piece%20of%20parchment%20paper%20to%20about%201/4%20inch%20thick.%20No%20need%20to%20flour%20the%20parchment,%20but%20you%20may%20need%20to%20lightly%20flour%20the%20rolling%20pin%20to%20avoid%20sticking.%20Slide%20the%20parchment%20onto%20a%20baking%20sheet%20and%20chill%2020%20to%2030%20minutes%20for%20easier%20cutting.%3C/p%3E%3Cp%3ECut%20into%20desired%20shapes%20right%20on%20the%20sheet%20pan,%20then%20peel%20away%20the%20excess%20dough,%20which%20can%20be%20re-rolled.%20Bake%20for%206%20to%208%20minutes.%20The%20cookies%20will%20remain%20blonde%20but%20be%20set.%20Let%20cool%20completely%20before%20removing%20from%20the%20trays%20and%20decorate%20as%20desired.%3C/p%3E%3Cp%3EPeanut%20butter%20cookies%20are%20my%20personal%20favorite.%20Once%20again,%20I%20scooped%20and%20she%20rolled%20into%20balls%20and%20then%20into%20sugar%20for%20a%20little%20extra%20sweetness%20and%20sparkle.%20She%20had%20a%20little%20trouble%20with%20the%20crisscross%20fork%20marks%20and%20asked%20me%20to%20finish.%20I%20suspect%20she%20was%20over%20it%20and%20wanted%20to%20get%20back%20to%20her%20Barbies.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20baking%20soda,%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees.%3C/p%3E%3Cp%3EIn%20mixing%20bowl,%20combine%20butter,%20peanut%20butter,%20sugar,%20brown%20sugar.%20Beat%20well%20until%20creamy.%20Add%20egg%20and%20vanilla%20and%20beat%20until%20well%20mixed.%3C/p%3E%3Cp%3EAdd%20flour%20and%20stir%20until%20combined.%3C/p%3E%3Cp%3ERoll%20dough,%20by%20tablespoons,%20into%20balls,%20then%20roll%20in%20sugar.%20Place%202%20inches%20apart%20on%20a%20parchment%20lined%20baking%20sheet.%20Flatten%20balls%20with%20a%20fork%20using%20a%20crisscross%20pattern.%3C/p%3E%3Cp%3EBake%2010%20-%2012%20minutes.%3C/p%3E){kind=link}
