There's just something about pasta that says comfort food. When I'm in need of a little 'fill the belly' comfort, 90% of the time I'll turn to pasta for dinner. Or a burger. Or something cheesy.
Well, with this Chili Cheese Mac, I get all three! In one easy, one-pot dish.
My other major comfort food is chocolate. But hmmmm, I don't think incorporating chocolate in Chili Cheese Mac would be very good. Mole Chile Cheese Mac? ...
I don't think so. So I'll just have to stick to hitting three of my favorite comfort foods in this one dish instead of four.
Not only does this Chili Cheese Mac scream cheesy pasta comfort food, it also gives the convenience of one-pot cooking.
That's right, just one big ol' skillet or Dutch oven is all you need to dirty up in making this.
I love that.
I ran across this recipe in Cooking Light Magazine. It took the hubby and I several times making it to adjust it to our liking ... we just thought the flavor of the original needed to be amped up, and it needed more cheesiness.
So we increased the spicing, added onion, increased the cheese, and sprinkled a dose of fresh cilantro on at the end. We absolutely love the flavor zip the fresh cilantro adds ... but if you're not a cilantro fan, by all means leave it out.

Chili Cheese Mac
Ingredients
2 tsp.
Canola oil
1 lb.
ground beef
1
medium onion, diced
1 tsp.
garlic powder
1/2 tsp.
ground cumin
2 tsp.
chili powder
1/2 tsp.
salt
2 c.
beef broth
1 c.
- water
- 1 (10 oz.)
- can mild diced tomatoes and green chilies, undrained {such as Rotel}
- 2 c. (8 oz.)
- uncooked elbow macaroni
- 1/2 c.
- milk
- 4 oz.
- cream cheese
- 6 oz. (about 1 1/2 c.) finely shredded sharp cheddar cheese
- chopped cilantro {optional}
Directions
Heat oil in a Dutch oven or large skillet over medium-high heat. Add ground beef and onion; cook until beef is browned. Drain fat.
Add garlic powder, cumin, chili powder, beef broth, water, and tomatoes; bring to a boil. Stir in macaroni. Reduce heat to medium-low, cover, and cook until macaroni is done, about 10 to 12 minutes.
Add cream cheese and milk; cook, stirring, over medium heat until cream cheese is melted. Remove from heat and stir in cheddar cheese until melted.
Serve with chopped cilantro sprinkled over the top, if desired.
