Chili Topped Potatoes

Ingredientes

  • 4-6 baked potatoes
  • 1/2 pound grnd beef
  • 1 (17 ounce.) can whole kernel corn, liquid removed
  • 1 (14 ounce.) can stewed tomatoes
  • 1/2 c. ketchup
  • 1/2 c. minced green pepper
  • 1-2 teaspoon chili pwdr

Direcciones

  1. In large skillet brown meat; drain fat. Stir in corn, tomatoes, ketchup, pepper and chili pwdr. Cover and simmer 10 min.
  2. Slit potatoes; spoon meat mix over each. Garnish with lowfat sour cream, grated cheese and diced chives, if you like.
  3. This is a very colorful topping and can be prepared while the potatoes bake in a microwave.
