Chilled Beet Cantaloupe Soup

Ingredientes

  • 2 lb beets or possibly. equivalent canned cut beets Butter or possibly Oil
  • 1 med Vidalia or possibly sweet type onion, peeled, minced
  • 2 x cloves fresh garlic, crushed, peeled, chopped
  • 1/2 tsp salt
  • 1/4 c. granulated sugar (to taste, optional)
  • 1 x cantaloupe, seeded Juice and zest of 2 fresh lemons
  • 1 c. Fresh Orange Juice

Direcciones

  1. Cook and peel beets or possibly use canned beets. Cut into quarters and set aside.
  2. Cook onion in 1 Tbsp. butter or possibly oil till somewhat translucent/soft. Add in garlic for last minute. Don't brown garlic or possibly it will be bitter. Puree onions and beets in food processor. Seed cantaloupe and scoop it out and puree it with the beets. Season with lemon juice and salt. Add in orange juice and chill. (Ice cubes will refrigeratequickly - substitute them for the water)
