Chilled Honeydew Melon Soup With Cinnamon

Ingredientes

  • 1 x honeydew melon, diced
  • 2 c. unsweetened apple, juice
  • 2 c. vegetable stock
  • 1 c. non-fat lowfat yoghurt
  • 1/4 c. finely minced fresh mint
  • 2 Tbsp. lemon, juice
  • 1/4 tsp grnd cinnamon or possibly 2 cinnamon, sticks
  • 2 Tbsp. finely minced fresh parsley

Direcciones

  1. In a food processor or possibly blender, combine the melon, apple juice, stock, yogurt, mint, lemon juice and grnd cinnamon (if using). Puree till smooth.
  2. Add in the cinnamon sticks (if using) and chill for several hrs to allow flavours to blend. Remove the cinnamon sticks before serving.
  3. Garnish with parsley.
