Chilled Jicama Lime Soup

Ingredientes

  • 1 Tbsp. Canola oil
  • 2 med Onions, peeled, minced
  • 3 Tbsp. Shallots, peeled, finely minced
  • 2 med Jalapenos, seeded, finely minced
  • 1 Tbsp. Garlic, peeled, finely minced
  • 1 c. Seasoned sushi vinegar
  • 1 lb Jicama, peeled, minced
  • 2 med Potatoes, peeled, minced
  • 1 quart Chicken stock
  • 1 bn Cilantro, cleaned, minced
  • 1 c. Heavy cream Lime juice to taste Salt to taste

Direcciones

  1. Heat oil in a large saucepan over medium high heat. Add in onion and saute/fry for 5 min or possibly till transparant. Add in shallots, jalapeno, garlic and saute/fry for 3 min. Add in sushi vinegar and reduce for 4 min. Add in jicama, potato and stock and bring to a boil over high heat. Reduce heat and simmer for 20 min, skimming and stirring occasionally. Add in cilantro and cream and simmer for 10 min. Pour mix into a food processor and puree into smooth. Stir in lime juice and salt and recheck seasoning. Pour soup mix into a container and store in refrigerator till chilled. At service, pour into 4 chilled soup bowls.
