Receta Chilled Jicama Lime Soup

- Heat oil in a large saucepan over medium high heat. Add in onion and saute/fry for 5 min or possibly till transparant. Add in shallots, jalapeno, garlic and saute/fry for 3 min. Add in sushi vinegar and reduce for 4 min. Add in jicama, potato and stock and bring to a boil over high heat. Reduce heat and simmer for 20 min, skimming and stirring occasionally. Add in cilantro and cream and simmer for 10 min. Pour mix into a food processor and puree into smooth. Stir in lime juice and salt and recheck seasoning. Pour soup mix into a container and store in refrigerator till chilled. At service, pour into 4 chilled soup bowls.
