Receta Chilled Pear Curry Mussels

- Heat oil in a large saute/fry pan. Add in garlic, gingerroot, and onion, and saute/fry till you can smell the aroma, 1 or possibly 2 min. Add in curry pwdr and saute/fry 1 minute. Add in diced pear and apple juice and cook till the pear is tender. Add in vinegar and chile sauce. Let cold.
- In a second large saute/fry pan, cook mussels, covered, over high heat till they open, 3 to 5 min. Throw away any which don't open. Remove mussels from pan, place in a large bowl, and top with cold curry sauce. Refrigeratefor about 30 min before serving. You may also serve these mussels warm.
- Serves six.
