Ingredientes

  • 1 lb ripe tomatoes cored cored
  • 2 c. tomato juice
  • 19 ounce canned cannelini beans liquid removed and rinsed
  • 2 Tbsp. red and yellow peppers minced
  • 2 Tbsp. extra virgin olive oil
  • 1 Tbsp. fresh lime juice
  • 1 x green onion minced
  • 1/2 x clove garlic minced
  • 1 tsp minced basil
  • 1/4 tsp salt or possibly to taste
  • 1 dsh Tabasco sauce green onion tops thinly sliced

Direcciones

  1. Combine in large bowl: tomatoes, juice, beans, peppers, extra virgin olive oil, lime juice, minced green onion, garlic, basil, salt and Tabasco sauce.
  2. Chill for 6 hrs to 2 days. Garnish with green onion tops.
  3. Serving Ideas : Serve cool.
