%20made%20by%20my%20friend%20Sheena%20at%20Galloway%20Chillies.%20%20If%20you%20haven't%20tried%20Galloway%20Chillies%20Jams%20then%20you%20don't%20know%20what%20you%20are%20missing%20and%20you%20should%20get%20some%20ordered%20up%20immediately%20so%20you%20too%20can%20'spread%20a%20little%20wildfire'.%3C/p%3E%3Cp%3EAs%20soon%20as%20I%20saw%20this%20flavoured%20icing%20sugar%20from%20Sugar%20and%20Crumbs%20I%20knew%20I%20had%20to%20have%20some%20and%20that%20it%20would%20pair%20perfectly%20with%20the%20Galloway%20Chillies%20jam.%3C/p%3E%3Cp%3EChilli%20Lime%20Cupcakes%3C/p%3E%3Cp%3EFor%20the%20cupcakes%3C/p%3E%3Cp%3EUsing%20a%20stand%20mixer%20beat%20the%20sugar%20and%20butter%20together,%20then%20add%20the%20eggs%20one%20at%20a%20time,%20finally%20add%20the%20lime%20juice%20and%20beat%20the%20mixture%20for%20about%203%20minutes%20until%20it%20is%20light%20and%20fluffy.%20%20Sift%20the%20flour%20and%20baking%20powder%20into%20the%20butter%20mixture%20and%20beat%20until%20incorporated,%20fold%20in%20the%20grated%20lime%20zest.%20%20%20Spoon%20the%20mixture%20into%20eight%20paper%20case.%20%20Heat%20the%20oven%20to%20180C,%20bake%20for%2020%20-25%20minutes%20until%20golden%20and%20when%20pressed%20on%20the%20top%20they%20feel%20firm.%20%20Remove%20from%20the%20oven%20and%20leave%20to%20cool%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EOnce%20cooled,%20core%20the%20cupcakes%20and%20fill%20with%20a%20teaspoon%20of%20the%20Chilli%20Lime%20and%20Ginger%20Jam.%20Cut%20the%20core%20in%20half%20and%20replace%20in%20the%20hole%20to%20cover%20the%20jam.%3C/p%3E%3Cp%3EFor%20the%20Icing%3C/p%3E%3Cp%3EBeat%20the%20butter%20for%20a%20few%20minutes%20until%20light%20and%20fluffy,%20sift%20in%20the%20icing%20sugar,%20add%20the%20lime%20juice%20and%20zest%20and%20beat%20for%20a%20further%20few%20minutes%20until%20the%20sugar%20and%20butter%20is%20combined.%20%20Spread%20the%20icing%20over%20the%20top%20of%20the%20cupcakes.%3C/p%3E%3Cp%3EDecorate%20with%20grated%20zest%20of%20lime%20and%20red%20sprinkles%20or%20finely%20chopped%20chilli.%3C/p%3E%3Cp%3EThese%20cupcakes%20are%20such%20a%20treat,%20the%20lime%20cuts%20through%20the%20sweetness%20of%20the%20jam%20and%20icing%20making%20the%20cupcakes%20taste%20really%20fresh%20and%20delicious.%3C/p%3E%3Cp%3EI'm%20entering%20them%20for%20Treat%20Petite%20the%20baking%20challenge%20for%20individual%20sweet%20treats%20run%20by%20Mr%20Cakeyboi%20and%20The%20Baking%20Explorer%20-%20the%20theme%20is%20'Anything%20Goes'.%3C/p%3E%3Cp%3EI%20was%20provided%20with%20the%20cupcake%20corer%20and%20icing%20spatula%20by%20OXO%20Good%20Grips%20and%20the%20Flavoured%20Icing%20Sugar%20by%20Sugar%20and%20Crumbs.%20%20I%20was%20not%20paid%20for%20this%20review%20and%20all%20opinions%20are%20my%20own.%3C/p%3E){kind=link}
