This is one of those classic recipes that I just loved, however don’t do what I did and add too much of the dressing. I’m always one to think that more sauce/dressing/toppings is always better-but not in this case. My second go at it, I used way less than the first time and the flavors were SO much better…
Chinese Chicken Salad
INGREDIENTS:
- 1 (3 ounce) package ramen noodle soup mix*
- 1/2 package coleslaw blend (or 1/2 of a cabbage)
- 1 rotisserie chicken-shredded
- 4 green onions, sliced
- 1/2 cup Light Asian Toasted Sesame dressing
- 1 tablespoon creamy peanut butter
- handful of peanuts
DIRECTIONS:
Break the noodles into small pieces in a large bowl. Add the coleslaw (or cabbage), chicken and onions; mix lightly.
Whisk the dressing and the peanut butter until combined. Add to salad; toss to coat and top with peanuts.
*You won’t need the seasoning packet.
