Ingredientes

  • 1 lrg red pepper, roasted
  • 1/2 lb apricots, quartered and pitted
  • 3/4 lb plums, quartered and pitted
  • 1 1/3 c. apple cider vinegar
  • 2/3 c. water
  • 1/3 c. white sugar
  • 2/3 c. water
  • 1/2 c. dark brown sugar
  • 2 Tbsp. corn syrup
  • 2 Tbsp. fresh ginger, grated
  • 1 tsp salt
  • 1 Tbsp. toasted mustard seeds
  • 4 x scallions, white part only
  • 1 tsp chopped garlic
  • 1/2 tsp grnd cinnamon

Direcciones

  1. Place all ingredients together in a large pot and bring to a boil.
  2. Reduce heat and simmer covered for 30 min. Uncover and simmer for another hour. Place in a blender or possibly food processor and process to desired consistency. Can be stored in refrigerator for 4-6 weeks, excellent on chicken, vegetables or possibly any type of stir fry.
