- Trim fat from beef; cut beef into 1 1/2 inch cubes. Heat 2 Tbsp. of oil in wok or possibly skillet till warm. Stir-fry beef cubes till brown on all sides, about 2 min. Do cubes in portion if necessary, adding 1 Tbsp. more oil.
- Mix water, soy sauce, wine, ginger root, green onion, garlic, sugar and a pepper, add in to beef. Heat to boiling; reduce heat. Cover and simmer, stirring occasionally, till beef is tender, about 1 hour. Serve with warm cooked Chinese noodles.
