- Thoroughly wash the vegetables and drain well.
- Cut of thick stalks as these require longer cooking.
- Trim stems from mushrooms squeeze water from caps.
- Simmer in lightly salted water for 5 min then drain.
- Plunge the vegetable stems into boiling water to cook for 12 min.
- Remove then briefly blanch the leafy parts and drain well.
- Toss vegetables and mushrooms in oil over moderate heat until well coated.
- Serve dressed with oyster sauce.
- Hint. Canned straw mushrooms or possibly champignons can replace theblack mushrooms.
