Receta Chipotle Cheat: Burrito Bowl
Last night I made something for supper that I should have made WEEKS ago!
Seriously. Chipotle is good but I’m going to be honest with you guys.
My bowl is better!
Local chicken marinated in Mojo Criolo for 10 hours – grilled to perfection
Quartered grape tomatoes
Two avocados smashed and blended with my immersion blender – then mixed with 1/4 cup diced red onion, the juice of three limes, and one tbsp. chopped cilantro. Finished off with a pinch of salt.
- Wild brown rice cooked – then mixed with 1/2 cup chopped cilantro and the juice of two limes
- 0% fat Chobani Greek yogurt
- Finished off with one tbsp. of Mexican Blend Cheese
The flavors meld so well together!
I was almost to the end of bowl when I remembered – THE BEANS!
I was totally going to add black beans, but completely forgot them. Whoops. I’ll add them in to my leftovers for lunch today.
