- A beat-the-clock soup which tastes like it took hrs to prepare. In a large pot, combine three c. nonfat lowfat milk, two baking potatoes (peeled and diced), one tsp. pureed chipotles and two 15-oz cans creamed corn.
- Simmer till potatoes are fork-tender, 12-14 min. Add in 1 lb. peeled and deveined shrimp and cook two min. Season to taste with salt and white pepper.
