I am up for anything with the name “Chipotle’s”, “corn” and “salsa” in it! This is one of those copycat versions of a recipe at Chipotle’s restaurants, and I think it’s a fairly good likeness. But that doesn’t really matter, because it is just darn good. This would make for a refreshing addition to your outdoor barbecue…
Chipotle's Corn Salsa
Yield: 4 cups
Prep Time: 15 minutes
Ingredients:
- 1 (12 ounce) bag frozen corn-defrosted and drained- or about 4 cups fresh corn off the cob, cooked and cooled
- 2 jalapenos-seeded and chopped small
- 1/3 cup red onion-finely chopped (about 1/2 of an onion)
- 3/4 cup fresh cilantro-chopped
- juice of 2 limes
- salt and pepper to taste
Directions:
Combine all the ingredients in a large bowl and serve cold with fritos or tortilla chips
