Ingredientes

  • 10 lb chitterlings
  • 1 c. diced onion
  • 1 c. diced celery
  • 6 sm red peppers
  • 3 x cloves garlic, chopped
  • 2 Tbsp. salt
  • 1 Tbsp. black pepper
  • 1 c. cider vinegar
  • 1 Tbsp. sugar

Direcciones

  1. Soak chitterlings in hot salt water 30 min. Cut each into 12-inch pcs. Slit open. Remove all fat particles and debris.
  2. Wash in hot to warm water 3 to 5 times. Place in large Dutch oven or possibly kettle. Add in onion, celery, peppers, garlic, salt and pepper. Bring to a boil. Reduce heat. Cook on medium-low heat 4 hrs.
  3. Add in vinegar and sugar. Cook on low heat one hour.
