%3C/p%3E%3Cp%3EWhy%20a%20freezer%20pie?%3C/p%3E%3Cp%3ESince%20eating%20a%20rice%20cake%20shouldn%E2%80%99t%20be%20boring%20%E2%80%93%20especially%20with%20all%20the%20flavors%20that%20Lundberg%20makes%20%E2%80%93%20I%20thought%20I%E2%80%99d%20go%20a%20bit%20out%20of%20the%20box%20and%20make%20a%20summer%20time%20dessert%20with%20their%20Kettle%20Corn%20Rice%20Cakes.%20I%20often%20use%20leftover%20rice%20to%20make%20gluten%20free%20quiche%20crusts.%20Taking%20that%20method%20one%20step%20further,%20I%20decided%20to%20use%20the%20rice%20cakes%20to%20create%20a%20crust,%20like%20crushed%20graham%20crackers%20are%20used%20in%20freezer%20pies.%20Freezer%20pies?%20Indeed,%20since%20warm%20weather%20is%20the%20perfect%20time%20for%20freezer%20pies%20as%20they%E2%80%99re%20cool,%20require%20no%20baking,%20and%20very%20little%20stove%20top%20cooking.%20Plus,%20making%20one%20with%20the%20honey%20almond%20butter%20would%20be%20delicious!%20(My%20son,%20Nathan,%20agrees%20and%20gave%20my%20freezer%20pie%20two%20thumbs%20up!)%3C/p%3E%3Cp%3EThis%20freezer%20pie%20recipe%20also%20gave%20me%20the%20chance%20to%20use%20a%20couple%20of%20special%20kitchen%20gadgets%20that%20I%20love.%20First,%20I%20used%20a%20Beka%20Cookware%20Bain%20Marie%20to%20melt%20the%20chocolate%20instead%20of%20a%20double%20broiler.%20I%20love%20the%20bain%20marie%20since%20it%E2%80%99s%20almost%20impossible%20to%20burn%20anything%20and%20you%20don%E2%80%99t%20run%20the%20risk%20of%20getting%20water%20in%20your%20chocolate.%20Second,%20I%20used%20my%20Blendtec%20Blender%E2%80%99s%20Twister%20Jar%20to%20make%20most%20of%20this%20recipe,%20but%20you%20could%20use%20a%20food%20processor%20instead.%3C/p%3E%3Cp%3EFinally,%20I%20tried%20to%20use%20as%20many%20organic%20ingredients%20in%20my%20freezer%20pie%20recipe%20as%20possible,%20since%20Lundberg%20Rice%20Cakes%20and%20many%20of%20the%20ingredients%20in%20the%20Justin%E2%80%99s%20almond%20butter%20are%20organic.%3C/p%3E%3Cp%3EAnd%20did%20I%20mention%20that%20this%20dessert%20is%20totally%20gluten%20free?%3C/p%3E%3Cp%3EChocolate%20&%20Almond%20Freezer%20Pie%3C/p%3E%3Cp%3EThe%20combination%20of%20coconut%20milk%20and%20honey%20almond%20butter%20creates%20a%20freezer%20pie%20with%20the%20consistency%20of%20ice%20cream.%20However,%20between%20the%20almond%20butter%20and%20dark%20chocolate,%20this%20is%20NOT%20a%20light%20dessert.%20Serve%20each%20person%20a%20small%20piece%20along%20with%20some%20blueberries%20for%20a%20delicious%20summer%20treat.%3C/p%3E%3Cp%3EInspired%20by%20No%20Bake%20Almond%20Butter%20Pie%20from%20One%20Happy%20Table%3C/p%3E%3Cp%3EMakes%2010%20to%2012%20servings%3C/p%3E%3Cp%3EFor%20the%20pie%20filling:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ETo%20make%20the%20pie%20crust%3C/p%3E%3Cp%3EPlace%20rice%20cakes%20(about%20half%20a%20package)%20into%20a%20food%20processor%20and%20grind%20them%20into%20fine%20crumbs.%3C/p%3E%3Cp%3EAdd%20the%20vegan%20buttery%20spread%20and%20sugar%20and%20pulse%20until%20combined.%20Firmly%20and%20evenly%20press%20the%20mixture%20into%20a%20pie%20plate.%3C/p%3E%3Cp%3EBreak%20the%20chocolate%20into%20small%20pieces%20and%20combine%20with%20the%20shortening%20and%20melt.%20You%20can%20do%20this%20in%20a%20double%20boiler,%20in%20a%20bain%20marie,%20or%20carefully%20over%20low%20heat%20in%20a%20sauce%20pan%20in%20medium%20heat-proof%20bowl,%20stirring%20constantly.%3C/p%3E%3Cp%3EDip%20a%20pastry%20spoon%20into%20the%20melted%20chocolate%20and%20give%20the%20pie%20crust%20a%20thin%20coat%20by%20using%20the%20pastry%20brush%20to%20paint%20on%20the%20chocolate.%20Work%20quickly%20and%20try%20not%20to%20loosen%20the%20rice%20cake%20crust.%3C/p%3E%3Cp%3EChill%20the%20crust%20in%20the%20freezer%20for%2015%20minutes.%3C/p%3E%3Cp%3ETo%20make%20the%20pie%20filling%3C/p%3E%3Cp%3EPlace%20the%20almond%20butter,%20coconut%20milk,%20sugar,%20and%20salt%20into%20a%20large%20mixing%20bowl%20and%20using%20a%20hand%20mixer,%20beat%20until%20completely%20blended.%20If%20you%20have%20a%20Blendtec%20or%20similar%20blender,%20you%20can%20also%20combine%20the%20ingredients%20in%20the%20blender%20using%20the%20sauce%20setting.%3C/p%3E%3Cp%3ERemove%20the%20pie%20crust%20from%20the%20refrigerator%20and%20pour%20the%20pie%20filling%20into%20the%20shell.%20Gently%20tap%20the%20pie%20plate%20on%20the%20counter%20to%20release%20any%20air%20bubbles.%3C/p%3E%3Cp%3EPlace%20the%20pie%20back%20into%20the%20freezer%20for%201%20hour%20or%20until%20set.%3C/p%3E%3Cp%3ERemove%20pie%20from%20freezer.%20Prepare%20the%20chocolate%20drizzle%20by%20remelting%20the%20remaining%20chocolate,%20if%20needed.%3C/p%3E%3Cp%3ETake%20a%20spoon,%20dip%20into%20the%20melted%20chocolate,%20and%20drizzle%20chocolate%20over%20the%20pie%20in%20a%20decorative%20manner.%3C/p%3E%3Cp%3EPlace%20the%20pie%20back%20into%20the%20freezer%20for%2030%20more%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20freezer%2015%20minutes%20before%20serving.%20Slice%20carefully%20and%20enjoy!%3C/p%3E%3Cp%3ETwo%20ways%20to%20win%20with%20Lundberg!%3C/
