.%3C/p%3E%3Cp%3ENext%20was%20the%20honey.%20When%20I%20said%20to%20Dr%20Food%20%22I%20don't%20have%20any%20honey%20left%22%20I%20thought%20he%20was%20going%20to%20choke.%20He%20proceeded%20to%20go%20to%20the%20pantry%20and%20pull%20out%20my%20collection%20that%20I%20had%20um...%20forgotten%20about?%20I%20really%20had%20to%20decide%20what%20to%20use.%20Honey%20is%20one%20of%20my%20favorite%20ingredients.%3C/p%3E%3Cp%3EI%20went%20with%20a%20honey%20that%20I%20had%20gotten%20in%20British%20Columbia%20at%20Tugwell%20Creek%20Honey%20Farm%20and%20Meadery%3C/p%3E%3Cp%3ESo,%20the%20cream,%20honey%20(lots%20of%20it)%20and%20ancho%20got%20simmered%20together.%3C/p%3E%3Cp%3ENext%20it%20was%20added%20to%20the%20chocolate.%3C/p%3E%3Cp%3EThis%20puppy%20was%20now%20put%20into%20the%20refrig%20for%20about%202%20hours.%20Meanwhile%20we%20were%20planting%20flowers%20and%20it%20turned%20into%20an%20archeological%20dig.%20Besides%20not%20being%20able%20to%20find%20Valrhona%20chocolate%20easily%20little%20did%20I%20know%20that%20there%20were%20boulders%20everywhere%20you%20go%20around%20here.%20Hence,%20the%20name%20of%20my%20blog.%3C/p%3E%3Cp%3EWe%20had%20to%20get%20a%20little%20help%20from%20our%20neighbor%20who%20then%20was%20the%20recipient%20of%20truffles%20(see?%20it%20does%20have%20to%20do%20with%20my%20foodie%20fight).%20Just%20so%20you%20don't%20worry%20about%20the%20outcome%20of%20this%20sidebar...%3C/p%3E%3Cp%3EThe%20flowers%20got%20planted.%20Ok,%20I%20digress.%20Lets%20get%20back%20to%20time%20lapse%20photography%202%20hours%20later.%3C/p%3E%3Cp%3EThe%20fun%20begins%20and%20now%20is%20the%20time%20for%20chocolate%20rolling.%20The%20ganache%20is%20rolled%20into%20balls.%3C/p%3E%3Cp%3EThey%20then%20go%20back%20into%20the%20refrig%20for%20a%20couple%20of%20hours.%20Ready%20for%20another%20sidebar?%20You%20want%20to%20know%20what%20I%20was%20doing%20in%20THOSE%20two%20hours%20don't%20you?%20Ok,%20I%20was%20still%20planting%20flowers%20and%20digging%20boulders%20and%20going%20back%20and%20forth%20to%20damn%20hardware%20stores%20for%20dirt%20and%20mulch%20AND%20THEN....I%20went%20swimming!%20I%20knew%20you%20wanted%20to%20know.%3C/p%3E%3Cp%3EOk...whew...out%20of%20the%20refrig%20the%20ganache%20balls%20come%20and%20it%20is%20time%20to%20dip%202nd%20layer.%20For%20this%20layer%20it%20was%20the%20Callebaut%20melted%20in%20a%20double%20boiler%20and%20then%20cooled%20to%2090%20degrees%20(didn't%20get%20a%20picture%20of%20this%20but%20it%20looks%20just%20like%20the%20other%20melted%20chocolate%20that%20I%20showed%20you.%3C/p%3E%3Cp%3EI%20then%20mixed%20ancho%20chili%20with%20cocoa%20powder%20and%20rolled%20the%20truffles%20in%20it%20to%20finish%20them%20off.%20They%20then%20got%20refrigerated%20for%20about%202%20more%20hours.%20I%20have%20to%20say%20that%20they%20tasted%20really%20good.%20The%20honey%20was%20definately%20there%20in%20the%20taste%20and%20the%20ancho%20did%20not%20overpower%20at%20all.%20I%20would%20definitely%20make%20these%20again.%3C/p%3E%3Cp%3E1.%20Chop%2012%20ounces%20chocolate%20into%20chunks.%20Put%20the%20chocolate%20into%20a%20food%20processor%20and%20process%20until%20finely%20chopped.%3C/p%3E%3Cp%3E2.%20Bring%20cream,%20honey%20and%201%20tsp%20Ancho%20powder%20to%20a%20boil,%20stirring%20constantly%20so%20it%20doesn't%20scorch.%3C/p%3E%3Cp%3E3.%20With%20processor%20running%20,%20add%20cream%20to%20chocolate%20and%20process%20until%20cream%20is%20completely%20mixed%20into%20chocolate.%3C/p%3E%3Cp%3E4.%20Refrigerate%20chocolate%20mixture%20until%20chilled.%3C/p%3E%3Cp%3E5.%20Mix%20ancho%20powder%20and%20cocoa%20together%20in%20a%20bowl.%3C/p%3E%3Cp%3E6.%20Using%20powder%20sugar%20on%20your%20hands%20to%20prevent%20the%20chocolate%20from%20sticking,%20roll%20teaspoonful%20of%20the%20chocolate%20mixture%20into%20balls.%3C/p%3E%3Cp%3E7.%20Refrigerate%20until%20chilled.%3C/p%3E%3Cp%3E8.%20Melt%201lb%20chocolate%20in%20the%20top%20of%20a%20double%20boiler.%20Allow%20chocolate%20to%20cool%20to%20about%2090%20degrees.%20Take%20each%20chocolate%20ball%20and%20dip%20into%20the%20melted%20chocolate%20and%20then%20dip%20into%20cocoa%20mixture.%3C/p%3E%3Cp%3E9.%20Refrigerate%20until%20truffles%20are%20hard.%20Serve%20at%20room%20temperature.%3C/p%3E%3Cp%3ESo%20that%20was%20MY%20sunday.%20Now%20please%20vote%20for%20me%20at%20Foodie%20Fights%20on%20June%2022.%20OK?%20I%20made%20these%20AND%20lifted%20a%20boulder%20all%20in%20the%20same%20day.%20Ok,%20I%20didn't%20lift%20the%20boulder%20but%20I%20did%20plant%20the%20flowers%20and%20made%20truffles.%3C/p%3E){kind=link}
