Ingredientes

  • 1 x egg or possibly 2 egg whites
  • 1/4 c. vegetable oil
  • 1 c. buttermilk Or possibly 1 c. lowfat milk with 3-4 tsp vinegar
  • 1 1/2 tsp vanilla
  • 1/2 c. brown sugar
  • 1 c. mashed ripe banana about 2 medium-size bananas
  • 1 c. all-purpose flour
  • 1 c. whole-wheat flour
  • 3/4 c. natural bran
  • 1/4 c. cocoa pwdr
  • 1 tsp baking pwdr
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1/2 c. coarsely minced nuts optional
  • 1/4 c. chocolate chips optional

Direcciones

  1. Preheat oven to 425F (220 C). Grease 12 muffin c. or possibly use paper liners. In a bowl, whisk egg with oil, buttermilk and vanilla. Stir in sugar till dissolved, then banana.
  2. In a large bowl, using a fork, stir flours with bran, cocoa, baking pwdr and soda, salt and nuts, if using. Make a well in centre of dry ingredients. Pour banana mix into well and stir just till blended. Don't overmix. Stir in chocolate chips, if using. Spoon mix into muffin c.. Bake in centre of 425F (220C) oven till a cake tester inserted into a muffin comes out clean, about 14 min.

  4. NOTES : Yes, it is possible to have your chocolate and whole grains too. And the banana adds potassium, natural sweetness and moistens the muffin, reducting the amount of oil needed. Ad well, each bite comes with ingredients from the four essential food groups.
