- Melt the chocolate
- Cream butter and sugar together.
- Separate the yolk and the whites. Beat the yolks. Add these to the butter and the sugar.
- Add in the melted chocolate.
- Combine the flour, baking powder, bicarbonate of soda and salt in another bowl.
- Combine the milk and vanilla essence in a jar.
- Add a third of the flour mixture to the butter and sugar, along with a third of the milk mixture. Continue to do this until they are all mixed.
- In a clean bowl, whisk the egg whites until they make peaks.
- Fold these into the bake mixture, use a metal spoon.
- Divide the mixture between two cake tins. Line these with greaseproof paper if you wish.
- Bake in the oven at 170C for 30 minutes.
- For the icing
- Melt the chocolate.
- Beat the butter, milk, vanilla and icing sugar together.
- Add in the melted chocolate.
