Receta Chocolate Cherry Brownie... uh.
Chocolate Cherry Brownie... uh.
It is officially dessert central here in the home of La Pure Mama which is SO not helping my diet situation. My trainer is convinced I can lose five pounds this week; one down, four to go but these are definitely not helping!
I made these at Honey's request; I'm such a good wife! They go quite well with a healthy glass of soy milk or, even better... a delicious glass of glorious red wine.
Also, today is Adventure Wednesday! Perhaps I will pack a picnic and take you through the disaster that is the front of our house... remember the ants? Or maybe we will stay in the back. It's also yard work day because I'm trying to get ready for my BFF's bridal shower in a couple weeks. Our yard is just 'to the right' of white trash... (and I mean that with all the love) my Mom says it looks like we're renters. She also says our front door is 'unsightly' because there aren't any decorations to welcome you. Maybe I should use the front door more often, to realize it's full 'unsighly-ness' (is that a word?)
Anyway, Adventure Wednesday... stay tuned. Maybe I'll actually go somewhere pretty amazing. Until then, get in the kitchen and make these brownies! You won't be sorry (oh, and they're vegan, so bonus!)
Need:
- 2 teaspoons ground flax seed
- 1/2 cup vanilla soy milk
- 1 1/2 cups granulated sugar
- 3/4 cup applesauce, unsweetened
- 2 teaspoons vanilla extract
- 1 1/2 cups unbleached all-purpose flour
- 3/4 cup ultra dark unsweetened cocoa powder (if you have a local chocolate shop, get it there... soo much better)
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chocolate chips (dairy free!!)
- 1 1/2 cup fresh cherries, de-stemmed and de-seeded
Do:
In a small bowl, combine the flax seed and soy milk. Whip with a fork and set aside.
Preheat oven to 350 and grease one 9 by 12 baking pan.
In your Kitchenaid (or in a bowl if you must) combine sugar and applesauce and mix. Add vanilla, then give the flax seed/soy mixture a quick stir and add that to the sugar and applesauce.
In a separate bowl, combine the flour, cocoa, baking powder and salt. Mix well and then add it in batches to the applesauce mixture.
Add the chocolate chips and cherries to the whole mix and once just combined.
Pour into the prepared baking pan and pop in the oven! Bake for 40 minutes then remove.
Let cool and serve.
Serve:
On a plate or in your hand... so good! These little beauties pair well with a little soy delicious ice cream to finish off your plate. Bonus: wrap them in a little parchment paper for a picnic! Perfect for your very own Adventure Wednesday :)
