What do you get when you add mini chocolate chips and banana slices to pancake batter?

That's what I tried in my kitchen yesterday and I can say with all my heart (and stomach) that you get some effing good pancakes!

Sorry for dropping the f-bomb and my poor use of the English language (although "f-bomb" is now considered a word in the dictionary so the language is going to hell anyway).

Now you may be questioning how this recipe fits in with eating right with LESS effort.

Let me start with the LESS effort part.

Pancakes are about the easiest thing to make as long as you don't have to spend time looking up the recipe.

There is a secret formula you can use so you'll never have to refer to a basic pancake recipe again. I know of two ways you can get it.

One option is to watch this video by Jamie Oliver where he shares the secret formula while making pancakes with his two daughters Daisy and Poppy.

Now that you have the secret formula, let's talk about how these pancakes fit into eating right.

Upon first glance they may look overly decadent but the worst ingredient you'll find in them (from a health perspective) is the chocolate chips. Hey, in some circles they’re even considered healthy.

These pancakes offer a good source of fibre (whole wheat flour) and they’ll pump you up with potassium (bananas).

The only other ingredient that may not be the healthiest is the syrup. I say leave it off. I ate one of these chocolate filled banana pancakes straight-up and didn’t miss the syrup at all!

Ok just a little (I love syrup!). Enjoy your pancakes!

Make this recipe with LESS effort!

Take a few minutes and watch the Jamie Oliver video (or my video) on pancakes. His method does make it easier. Just keep in mind he is using self-rising flour. If you use regular all purpose (or whole wheat) flour you'll need to add baking powder or you'll end up with crepes...which isn't a bad thing either.

Time it takes: 20 minutes to prepare and cook

Makes: 9 pancakes

In a medium bowl, combine all-purpose flour, whole wheat flour, milk, egg, baking powder and salt. Mix just until blended (do not overmix; some small lumps may remain). Gradually stir in chocolate chips.

Lightly brush a non-stick skillet with oil and heat over medium heat. Pour 1/4 cup of batter into skillet (you should be able to do 2 at a time if using a 10-inch skillet). Top each pancake with 4 banana slices. Cook until bottoms brown and bubbles form on top, about 2 minutes. Turn pancakes over and cook until brown, about 2 minutes. Repeat process with remaining batter.

Top pancakes with extra chocolate chips and banana slices.
