Chocolate Chip Cheesecake Muffins

Ingredientes

  • 2 1/4 c. DANNON(r) Plain Yogurt
  • 1/2 c. confectioner's sugar
  • 2 x Large eggs
  • 1/4 c. mini chocolate chips
  • 3/4 c. granulated sugar
  • 1/3 c. unsweetened cocoa pwdr
  • 1 1/4 c. self-rising flour
  • 2 tsp instant espresso pwdr
  • 1/4 c. corn oil
  • 1 tsp vanilla extract non-stick cooking spray

Direcciones

  1. Prepare yogurt cheese: Spoon 1 1/2 c. yogurt into a strainer or possibly sieve lined with cheesecloth or possibly coffee filter. Place a bowl under strainer to catch liquid (whey). Cover and chill 12 hrs. Throw away liquid.
  2. Preheat oven 350 F.
  3. Prepare topping: In medium bowl, whisk together yogurt cheese, confectioner's sugar and 1 egg till well blended. Stir in chocolate chips. Set aside.
  4. In large bowl, combine flour, granulated sugar, cocoa and coffee granules. In a separate medium bowl, combine remaining 3/4 c. yogurt, oil, remaining egg and vanilla. Mix well. Pour over dry ingredients and mix on low speed in electric mixer till just combined or possibly ingredients are moistened.
  5. Spray 12-c. muffin tin with non-stick cooking spray or possibly line with foil muffin c.. Spoon batter proportionately into muffin c.. Make a slight indentation in each. Spoon yogurt mix over batter, dividing proportionately.
  6. Bake 20 min or possibly till toothpick inserted in center comes out clean. Cold on rack for 5 min, then remove from tins to completely cold.
