I am a little late to the party this week, but no worries I made it! What party am I talking about? The #ChocolateParty, of course! Each month we come together and pair chocolate with a chosen ingredient. What would be more fitting for a challenge ingredient than ice cream in July? I thought I had this one completely under control, until I figure out I misunderstood the rules this month. Originally I made an homemade ice cream that had chocolate in it. But we actually had to use the ice cream as an ingredient, not just make ice cream. But that just means you get an ice cream recipe from me later, not all bad!

In my last minute thinking of what to make for the #chocolateparty, chocolate chip cookies sandwiched around vanilla ice cream came to mind. Decorated with 4th of July sprinkles was an added bonus given the day! Speaking of which, are you ready for the 4th? I use my Perfect Chocolate Chip Cookie recipe for these ice cream sandwiches. The cookie part is soft and chewy, which I love with the ice cream. I hate biting into a crispy cookie with the soft ice cream, and having the cookie crumble and make a big mess. To make assembling these a little easier, I let the ice cream soften. Then I spread it about 1 inch thick onto a baking sheet with sides. I pressed firmly, using plastic wrap. Pop it back into the freezer to harden completely. Then I found a plastic cup that was about the size of my cookies, and used that almost as a cookie cutter to get disks of ice cream to put between the cookies. There were a few steps involved, but it worked really well!

Chocolate Chip Cookie Ice Cream Sandwiches

Serves: 15

Preheat oven to 350 degrees.

Bake cookies for 10 minutes, or until done. Allow to cool completely.

Match up like sizes of cookies.

Let ice cream soften, so you can spread it on the cookies.

Using a generous ¼ cup of ice cream, spread onto the base of a cookie. Top with the matching pair, and press down slightly.

Roll in sprinkles

Place back in the freezer to harden before serving
