I like this recipe. I have a good one but it doesn't include oats, looking forward to trying this one
%20but%20I%20needed%20to%20make%20cookies%20for%20Creative%20Cookie%20Exchange%20and%20then%20I%20also%20needed%20cake%20for%20Bundt%20Bakers%20(coming%20Thursday).%20And%20after%20taking%202%20months%20off%20of%20serious%20blogging%20I%20was%20pretty%20determined%20to%20get%20back%20in%20the%20game%20so%20to%20speak.%20But%20I%20also%20felt%20badly%20for%20Alex,%20whose%20birthday%20celebrations%20really%20got%20the%20short%20end%20of%20the%20stick%20this%20summer%20with%20my%20surgery%20melodrama.%3C/p%3E%3Cp%3EIt%20is%20a%20good%20thing%20we%20have%20had%20a%20lot%20of%20guests%20the%20last%20few%20days.%3C/p%3E%3Cp%3EThe%20theme%20for%20this%20month%E2%80%99s%20Creative%20Cookie%20Exchange%20is%20Summer%20Harvest.%20I%20was%20batting%20around%20tons%20of%20ideas%E2%80%93once%20you%20start%20thinking%20about%20it%20you%20realize%20there%20are%20so%20many%20creative%20ways%20to%20shove%20August%20fruits%20and%20even%20vegetables%20into%20cookies%E2%80%93when%20I%20came%20across%20these%20Zucchini-Oat%20Chocolate%20Chip%20Cookies%20over%20at%20Cooking%20Classy.%3C/p%3E%3Cp%3EI%20became%20obsessed.%20Probably%20because%20at%20the%20end%20of%20the%20day%20my%20favorite%20cookie%20will%20always%20be%20Chocolate%20Chip%20and%20all%20of%20its%20various%20permutations.%20I%20played%20with%20the%20recipe%20a%20bit,%20adding%20some%20nut%20flour,%20reducing%20the%20all%20purpose%20flour,%20reducing%20the%20butter,%20using%20almonds%20instead%20of%20pecans,%20increasing%20the%20brown%20sugar%E2%80%A6%20I%20also%20used%204%20egg%20yolks%20instead%20of%202%20eggs%20since%20I%20had%20them%20in%20my%20fridge.%20The%20zucchini%20somehow%20(from%20moisture?%20Any%20baking%20chemist%20types%20want%20to%20take%20a%20stab?)%20made%20the%20cookie%20cakier%20than%20is%20my%20ideal%E2%80%93but%20they%20were%20still%20darn%20tasty.%20They%20got%20thumbs%20up%20from%20both%20my%20parents%20(who%20had%20them%20after%20lunch%20and%20then%20mousse%20after%20dinner!!!)%20and%20my%20brother%20and%20his%20girlfriend,%20who%20visited%20after%20running/swimming/biking%20in%20a%20multisport%20event%20near%20my%20house.%20They%20have%20grown%20on%20me%E2%80%93once%20I%20accepted%20their%20cakiness,%20I%20found%20myself%20craving%20them%20at%20odd%20hours.%3C/p%3E%3Cp%3EWith%20zucchini%20and%20nut%20flour%20they%20are%20basically%20health%20food,%20right?%20Right!?!?!?%3C/p%3E%3Cp%3EChocolate%20Chip%20Cookies%20with%20Zucchini%20and%20Almonds:%20Creative%20Cookie%20Exchange%3C/p%3E%3Cp%3ERecipe%20type:%20Dessert%20Cuisine:%20Cookies%3C/p%3E%3Cp%3E3%20medium%20zucchini%20or%20four%20scant%20cups%20of%20shredded%20zucchini%201%20t%20fine%20sea%20salt,%20divided%201%20cup%20white%20whole%20wheat%20flour%201%C2%BD%20cups%20AP%20flour%20%C2%BD%20cup%20almond%20flour%201%20t%20baking%20soda%20%C2%BE%20cup%20unsalted%20butter%201%20cup%20brown%20sugar%201%20cup%20white%20sugar%204%20egg%20yolks%201%20T%20vanilla%20extract%203-4%20cups%20chocolate%20chips%20(I%20like%20a%20lot%20but%20use%203%20if%20you%20prefer%20more%20cookie%20and%20less%20chocolate)%201%C2%BD%20cups%20chopped%20almonds%202%20cups%20rolled%20oats%3C/p%3E%3Cp%3EVanilla%20Salt%20for%20sprinkling%3C/p%3E%3Cp%3EBegin%20by%20tossing%20the%20zucchini%20in%20a%20colander%20with%20%C2%BD%20teaspoon%20of%20the%20salt.%20Place%20either%20in%20a%20sink%20or%20with%20a%20towel%20underneath%20it.%20Set%20aside%20while%20you%20prepare%20the%20cookie%20dough.%20Whisk%20together%20in%20a%20medium%20large%20bowl%20the%20flours%20(including%20the%20almond%20meal),%20baking%20soda%20and%20remaining%20%C2%BD%20teaspoon%20of%20salt.%20Set%20aside.%20Beat%20the%20butter%20creamy%20using%20either%20a%20stand%20mixer%20or%20handheld.%20Scrape%20the%20sides%20of%20the%20bowl%20and%20add%20the%20sugars.%20Beat%20until%20lightened%20and%20fluffy.%20Scrape%20the%20sides%20and%20bottom%20of%20the%20bowl%20as%20needed.%20Beat%20in%20the%20egg%20yolks%20one%20at%20a%20time.%20Beat%20in%20the%20vanilla.%20Keep%20scraping%20the%20bowl%20as%20needed.%20Now%20return%20to%20the%20zucchini.%20The%20water%20will%20have%20helped%20it%20expunge%20a%20lot%20of%20liquid.%20Using%20a%20clean%20towel,%20squeeze%20even%20more%20water%20out%20of%20it.%20Then%20mix%20it%20into%20the%20butter/sugar/egg%20mixture.%20With%20the%20mixer%20on%20the%20slowest%20speed,%20mix%20in%20the%20flour%20mixture.%20When%20it%20is%20mostly%20mixed%20in,%20add%20the%20chocolate%20chips%20and%20chopped%20almonds.%20Scrape%20the%20sides%20and%20bottom%20of%20the%20bowl.%20Continue%20mixing%20on%20the%20lowest%20speed%20until%20the%20flour%20is%20incorporated%20evenly%20and%20the%20nuts%20and%20chocolate%20chips%20are%20evenly%20distributed.%20Cover%20the%20bowl%20with%20plastic%20wrap%20and%20let%20it%20rest%20at%20least%20one%20hour,%20preferably%20overnight%20(I%20compromise%20by%20baking%20off%20a%20few%20only%20that%20day)%20in%20the%20fridge.%20When%20you%20are%20ready%20to%20bake,%20preheat%20the%20oven%20to%20350%20F.%20Line%20a%20bakin
