This was my second weekend not having to work, and we did the weekend the way a weekend should be done! There were lots of good times with lots of good friends,  WAY too much food and possibly a Mai Tai in a townie bar. Yes, the way a weekend should be done… After a weekend like that, the only way to end it is with a delicious sweet treat. That could mean ice cream at Moozy’s, a walk to the convenience store for a pint of Ben & Jerry’s or maybe a candy bar, or, in the best of circumstances, a delicious baked treat. The problem with that is I have a well-documented baking-disorder. And cookies…well cookies I bake NEVER turn out the right way. I can even make Toll House look bad. So, I took a gamble and went for it. And Double Chocolate Cookies would be my victim, with inspiration from Pinterest. In usual me fashion, I decided to improvise a little. How excited was I when these came out as amazingly delicious, moist, chewy, chocolately cookies of happiness! Now, I won’t hold my breath that I will ever be able to bake something this good again, even if I do follow the recipe to the letter (which I won’t). But for now, I will enjoy my small success! Chocolate Chocolate Cookies Ingredients 1/2 cup plain flour 1/4 cup cocoa powder 1/4 tsp baking soda 1/4 tsp salt 1/4 cup butter 1 ounce Bakers’ chocolate (chopped) 3/4 cup + 1/4 cup sugar 1 tsp vanilla extract 1 large egg Directions Preheat oven to 325 degrees Cover cookie sheet with aluminum foil and spray with cooking spray In a bowl, whisk together flour, cocoa, salt and baking soda In a separate bowl, combine butter, 1/4 cup sugar and Bakers’ chocolate Place chocolate mixture in the microwave for 30 seconds, stir, repeat for 15 second intervals until chocolate is melted Add 3/4 cup sugar, vanilla, egg and melted chocolate mixture to the flour mixture and mix well until ingredients are all combined. Place 1 Tbsp scoops of dough at least 1 inch apart on the cookie sheet. Bake cookies for 14 minutes. They should still be soft when you remove them from the oven.
