I often get asked what my favorite cookie is, but I can never decide. I am terrible at making decisions and I have too many favorites. We have over 200 cookie recipes on our site and it is just too hard to narrow it down. I love them all!
I do know that I LOVE oatmeal cookies. They are always at the top of my list. I am currently loving Chocolate Chunk Oat Cookies. They are the ultimate oatmeal cookie!
These cookies are made with three kinds of oatmeal! First, I blend Quaker Old Fashioned Oats in the blender until they are a flour-like powder. I love using blended oats because they add a nutty flavor to the cookies.
For a hearty texture, I also add more Quaker Old Fashioned Oats to the dough and Quaker’s Quick 3-minute Steel Cut Oats. These cookies have a lot of whole grain and oatmeal goodness going on! To sweeten things up, I like to stir in big chocolate chunks. They are the perfect finishing touch to my oaty cookies!
I am sure the kiddos would love to open up their lunchbox and find a Chocolate Chunk Oat Cookie. You can also welcome them home with a plate of warm cookies and a glass of cold milk. A great after school snack!

Chocolate Chunk Oat Cookies
Yield: 20 cookies
Prep Time: 15 minutes
Cook Time: 8-10 minutes
These cookies are made with three kinds of oats-blended oats, old fashioned oats, and steel cut oats. They are the ultimate oatmeal cookies!
Ingredients:
- 1 1/4 cups Quaker Old Fashioned Oats, divided
- 1 cup white whole wheat flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground cinnamon
- 1/2 cup unsalted butter, at room temperature
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup Quaker 3 Minute Steel Cut Oats
- 1 cup chocolate chunks
Directions:
1. Preheat the oven to 350°F. Line baking sheets with parchment paper or Silpat baking mats and set aside.
2. In a blender, blend 1 cup of the old fashioned oats until powdery. In a large bowl, whisk together the blended oats, white whole wheat flour, baking powder, baking soda, salt, and cinnamon. Set aside.
3. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and both sugars until fluffy, about 3 minutes. Add the egg and vanilla extract and mix until combined.
4. With the mixer on low, slowly add the flour mixture. Stir in the remaining 1/4 cup old fashioned oats, steel cut oats, and chocolate chunks.
5. Drop cookie dough, about 2 tablespoons of dough, 2 inches apart on the prepared baking sheets. Bake for 8 to 10 minutes, or until lightly browned. Remove from oven and let cool for 2 minutes before carefully transferring the cookies to a wire rack to cool completely.
Note-if you don't have chocolate chunks, you can use chocolate chips. The cookies will keep in an airtight container at room temperature for up to 3 days or in the freezer for up to 1 month.
