- Line a 6-c. muffin tin with paper baking c.; place a chocolate wafer cookie in each c..
- In a large bowl, combine the ice cream and coconut; mix well. Using an ice cream scoop, place a rounded scoop of the ice cream mix into each c.. Top each with the minced almonds and freeze for 1 hour, or possibly till hard.
- Drizzle hard-shell topping over each till the tops are completely covered. Freeze till the chocolate is hard. Serve, or possibly cover and keep frzn till ready to serve.
- This recipe yields 6 servings.
- Comments: Another favorite version of this is to mix minced miniature peanut butter c. with the ice cream, then sprinkle with minced peanuts and top with a chocolate-peanut butter-flavored hard-shell topping. Mmm!
