Receta Chocolate Cookie Pillows
These soft Chocolate Cookie Pillows are glazed with a vanilla sugar icing.
Chocolate Cookie Pillows
- 2 cups white whole wheat flour
- ⅛ cup dark chocolate cocoa
- 1½ teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
- ⅔ cup granulated sugar
- ½ cup (1 stick) butter, softened
- 1 egg
- ½ cup 2% milk
- Vanilla Sugar Glaze
- 1 confectioners’ sugar
- Vanilla sugar for garnish
Preheat oven to 400 degrees F.
In medium bowl, combine flour, cocoa, baking powder, cinnamon, cloves, and salt. Set aside.
In large bowl, with mixer at low speed, beat granulated sugar with butter until blended, occasionally scraping bowl with rubber spatula.
Increase speed to high; beat until light and creamy.
At low speed, beat in egg.
Alternately beat in flour mixture and milk, beginning and ending with flour mixture, just until combined, occasionally scraping bowl.
With cocoa-dusted hands, shape dough by level tablespoons into 1-inch balls. Place balls, 2 inches apart, on ungreased cookie sheets.
Bake cookies 7 to 9 minutes or until puffed (they will look dry and slightly cracked).
Transfer cookies to wire rack to cool. Repeat with remaining dough.
When cookies cool, in medium bowl, with wire whisk or fork, gradually confectioner’s with ¼ cup boiling water adding a little at a time (You won’t need the whole ¼ cup) and blend well. Dip top of each cookie into glaze. Place cookies on wire rack set over waxed paper to catch any drips. Immediately sprinkle cookies with vanilla sugar. Allow glaze to set, about 20 minutes. Store cookies, with waxed paper between layers, in tightly covered container at room temperature up to 3 days, or in freezer up to 3 months.

I’m tired. Tired of everything. I haven’t really been in the true Christmas spirit this year. It seems like some things are changing as all the children get older and traditions are being broken. I wish things would stay the same. I know that is selfish of me, but it’s how I feel.
On top of all that, in case you missed the news flash, work has been despicable these past several months. The chaotic management of this particular department has brought me down.
I know that in the end I will persevere and come out on top. But I must admit, all of this background noise has had me neglecting my blog and feeling down.
But these soft pillowy cookies, with a rich and delicious chocolate taste and then iced with vanilla sugar will put a smile on your face.
Vanilla sugar is so incredibly delicious that you can add it to a cup of coffee, or maybe sprinkled on top of some ice cream or, maybe, I better stop while I am ahead.
