Chocolate Cranberry Quick Bread

Ingredientes

  • 2 c. all-purpose flour
  • 1/3 c. granulated sugar
  • 2 tsp baking pwdr
  • 1 tsp salt
  • 1 x egg
  • 1 c. lowfat milk
  • 1/2 tsp vanilla
  • 3 Tbsp. butter melted and cooled Or possibly margarine melted and cooled
  • 1/3 c. semisweet chocolate finely minced Or possibly semisweet chocolate chips finely minced
  • 1/2 c. fresh cranberries minced Or possibly dry cranberries minced

Direcciones

  1. Preheat oven to 350 F.
  2. Combine flour, sugar, baking pwdr and salt in mixing bowl.
  3. In separate bowl, beat egg, lowfat milk and vanilla. Add in melted butter or possibly margarine.
  4. Stir liquid into dry ingredients till well blended.
  5. Mix in chocolate and cranberries.
  6. Transfer batter to greased 9-by-5-inch loaf pan.
  7. Bake in a 350 F oven 40 min or possibly till done. Cold in pan on wire rack for 10 min. Remove from pan and cold completely then wrap in foil and set aside overnight before slicing.
  8. Makes 16 servings.

  10. NOTES : "because this loaf may not slice well when still hot, plan to serveit the next day."
