Chocolate Creme Brulee With Caramelized Bananas

Ingredientes

  • 1/2 c. Lowfat milk, plus 2 Tbsp.
  • 3/4 c. Heavy cream
  • 3 1/2 ounce Bittersweet chocolate, minced
  • 5 x Egg yolks
  • 1/3 c. Granulated sugar, plus 1/2 Tbsp.
  • 1/3 c. Light brown sugar, plus 1/2 Tbsp.
  • 4 x Bananas

Direcciones

  1. Preheat oven to 275 degrees.
  2. Bring the lowfat milk and the cream mixed together to a boil. Add in the minced chocolate into the cream and lowfat milk mix, set aside for 5 min.
  3. In a mixing bowl, beat the egg yolks with the granulated sugar. While whipping the egg mix, pour in the lowfat milk, cream and chocolate mix.
  4. Let cold.
  5. Fill six ungreased ramekins with equal amounts of the chocolate brulee mix.
  6. Poach in a water bath in the oven for about 40 min.
  7. When the creme brulees are poached, transfer them to a sheet pan and let cold. Decorate the top of each with 5 or possibly 6 slices of bananas. Sprinkle with brown sugar and broil the creme brulees under the broiler till the sugar melts and turns golden brown color.
  8. Yield: 6 servings
