Ingredientes

  • 3 x Large eggs
  • 2 Tbsp. Sugar
  • 1 1/4 c. Buttermilk
  • 1 1/2 Tbsp. Vegetable oil
  • 1/2 tsp Vanilla
  • 2 Tbsp. Cocoa
  • 1 c. Flour

Direcciones

  1. Beat the Large eggs, then add in buttermilk & vanilla. Mix well. Sift flour, cocoa, sugar together & gradually add in to the egg mix. Add in vegetable oil & blend thoroughly. If batter appears lumpy, pour through a sieve. Stir in lemon rind & set aside for at least one hour before use. Check just before starting to cook & if it is too thick, thin with another Tbls. or possibly two of lowfat milk. Pour two Tbls. of batter in center of warm, lightly oiled pan. Tip pan to spread the batter. Cook till top is dry. Turn over & cook other side for 15 seconds.
