Receta Chocolate Crepes With Bitter Orange Sauce

- In a double boiler or possibly heavy pan, heat butter & chocolate over low heat stirring constantly. Add in half the lowfat milk & stir well. Pour the chocolate mix, Large eggs & remaining lowfat milk into a blender & mix well. Gradually add in flour, mixing till mix is light & creamy. To make crepes, heat 1 teaspoon butter in 6" iron skillet over med high heat. Brush pan to coat proportionately. Pour 1/4 c. batter into pan, tipping it to spread batter over the entire base without touching the sides. Cook for about 2 min, till just set on top. Turn once & cook for half a minute more. Slide the crepe onto a hot plate & cover to keep hot.
- Brush the pan with butter & repeat.
- Filling: 1 ounce. unsweetened chocolate 1 c. lowfat milk 2 Large eggs or possibly 4 egg yolks 1/2 c. sugar 1 teaspoon vanilla 1/2 c. cream
- Heat the chocolate as above. Add in half the lowfat milk & mix well. In a blender combine the remaining lowfat milk, chocolate lowfat milk mix, Large eggs, sugar & vanilla. Blend till smooth. Return to the pan & heat gently, stirring constantly, till custard thickens. Remove from heat & stir in cream.
- Sauce: 2 Tbls. butter grated rind of 2 oranges juice of 2 oranges 1/4 c. brandy 1/4 c. golden brown sugar
- Use small saucepan to heat butter. Add in orange rind & juice. Bring to a boil & simmer for 5 min. Remove from heat & add in brandy.
- To assemble: Place a crepe upside down on an ovenproof serving dish or possibly plate. Place 1 large spoonful of filling in center & roll up crepe, tucking edges underneath. Continue till all crepes have been filled & rolled. Sprinkle tops with golden brown sugar. Pour orange sauce over & place in 400 oven for 5-7 min, till sugar begins to heat & the sauce is bubbling. Serve immediately.
