Chocolate Dipped Almond Cookies

Ingredientes

  • 1 c. Unsalted Butter
  • 2/3 c. Sugar
  • 1 lrg Egg Yolk
  • 1 tsp Vanilla
  • 2 c. Flour
  • 1/4 tsp Salt
  • 1 1/3 c. Blanched Almonds -- finely Minced Chocolate Dip-----
  • 9 ounce Semisweet Chocolate Chips -- (1 1/2 c.)
  • 4 1/2 Tbsp. Butter
  • 1 1/2 Tbsp. Warm Water

Direcciones

  1. Cream the butter and sugar till light and fluffy. Add in the yolk and vanilla, then flour, salt and finely minced almonds, mixing well. Shape the dough into 2 rolls, each 1 1/2 inches in diameter. Wrap rolls and chill till hard, about 2 hrs.
  2. Preheat oven to 350 and line baking sheets with parchment paper.
  3. With a sharp knife, cut the dough into 1/4-inch thick slices. Place 1 to 2 inches apart on baking sheets and bake 8-10 min, just till lightly browned. Cold.
  4. In the top of a double boiler, heat the chocolate and butter for the topping. Add in the warm water and stir till smooth. Dip an edge of each cookie into the chocolate and cold.
  5. Makes 8 dozen.
