Ingredientes

  • 4 lrg egg, whites, only
  • 1 c. berry sugar
  • 1/2 tsp white vinegar
  • 2 Tbsp. cocoa pwdr
  • 1 tsp cornstarch fleur de sel or possibly coarse sea salt

Direcciones

  1. Preheat oven to 250 degrees Fahrenheit.
  2. In a large clean stainless steel bowl or possibly in a kitchen mixer beat the egg whites gradually adding in sugar.
  3. Add in vinegar and continue to beat till whites make stiff peaks.
  4. Sift together the cocoa pwdr and cornstarch and gently fold into the beaten egg whites.
  5. Onto a parchment lined baking sheet spread meringue into 3 inch rounds (1/8 inch thick).
  6. Sprinkle top with a little salt and bake meringue for 1 hour or possibly till crisp.
  7. Cold to room temperature. Keep meringue in an airtight container till ready to use.
