Chocolate Ganache Tart with Pomegranate Glaze

There’s nothing like the holidays to activate all of your senses, especially the sense of smell. I’ve always been amazed at how the whiff of something baking or the scent of a perfume can make me feel like I am in a different time and place. In our home we always like to have what we call, “smell goods”. These could be in the form of a candle, room spray or a scented oil plugin. When I found out that the Glade® Limited Edition Winter Collection was available I knew these were the “smell goods” I wanted for this holiday season. However, the one special edition fragrance that really tugged at my heart strings was SHARE THE SPIRIT™ POMEGRANATE SPARKLER™. With this one the citrus scent, hints of sandalwood and cedar ushered in the holiday spirit and the memories came pouring in.

In past weeks I’ve shared memories of my mother with you and boy do those come flooding back this time of year. Growing up our home was the place to be during the holidays. As I’ve said before I didn’t pay much attention to what was going on in my mother’s kitchen. One day however, I decided to experiment with a pomegranate. To me it was the most exotic fruit I had ever heard of. I had just come home from school and hadn’t changed clothes yet. This day I wore a white pleated skirt and it was my favorite. As mom stood at the counter peeling oranges she advised me to change clothes before I started in on the pomegranate. I assured her I would be careful. She looked at me over her glasses with a motherly, “we’ll see” look as I proceeded to discover what was inside the fruit. As I sliced into it, the crimson juice spilled out on the counter and made its way to my beautiful white skirt. Again, I got the motherly look along with a tsk- tsk-tsk and I told you so. Being the loving mom that she was she also assured me that the skirt could be replaced and the stains would come off the counter. When I got a whiff of Glade® SHARE THE SPIRIT™ POMEGRANATE SPARKLER™, I instantly remembered my first experience with a pomegranate and the loving lesson I learned from my mother.

This scent also inspired me to create a recipe based on that experience. It was also my chance to redeem myself with pomegranates.

Chocolate Ganache Tart with Pomegranate Glaze

Crust

Instructions

Finely crush the cookies in a food processor. In a small bowl, stir the cookie crumbs and melted butter together with a fork. Press crumbs into the bottom and up the sides of a 9″ tart pan with removable bottom. Chill the crust about 30 minutes. To make the tart filling, place the chocolate and butter in a heatproof bowl. Bring the cream to a simmer in a small sauce-pan. Pour the hot cream over the chopped chocolate and let stand 1-2 minutes to melt. Whisk together until smooth. Pour the filling into the tart shell and chill in the refrigerator, uncovered, until the filling is firm, about 1 ½ hours.

To make the glaze, combine the pomegranate juice, sugar, and lemon juice in a small pot

over medium heat. Bring to a boil then reduce to a simmer. Simmer, uncovered stirring frequently, until syrupy and reduced by about half (about 15 minutes). Remove from heat and stir in the pomegranate seeds. Spoon the glaze over the cake and serve. Garnish with pistachios if desired.

To serve, transfer the tart to a serving plate or platter. Slice with a clean, sharp knife, wiping the blade between slices.
