Receta Chocolate Mascarpone Mousse

- Roughly chop the chocolate and heat it using a bain marie pan
- Pour the egg yolks into a large bowl
- Add in the sugar and mix till you obtain a light and airy whitish cream
- Add in the rum
- Blend in the Mascarpone and melted chocolate
- Mix well till you obtain a homogenous mix
- Whip the egg whites
- Blend the egg whites into the chocolate and mascarpone cream
- Very gently fold the egg whites into the chocolate mascarpone mix till blended; this careful mixing technique retains the egg whiteâs consistency
- Pour the mousse into individual bowls
- Place the bowls in the refrigerator for three hrs before serving
- Sift powdered cocoa over the top of each bowl just before serving
