Chocolate Mascarpone Mousse

Ingredientes

  • 5 ½ ounce (150 g) dark chocolate (70% cocoa minimum)
  • 3 ½ ounce (100 g) Mascarpone
  • 6 ¾ fl ounce (2 cl) rum
  • 2 egg yolks
  • 3 egg whites
  • 1 ¾ ounce (50 g) sugar
  • Powdered Cocoa

Direcciones

  1. Roughly chop the chocolate and heat it using a bain marie pan
  2. Pour the egg yolks into a large bowl
  3. Add in the sugar and mix till you obtain a light and airy whitish cream
  4. Add in the rum
  5. Blend in the Mascarpone and melted chocolate
  6. Mix well till you obtain a homogenous mix
  7. Whip the egg whites
  8. Blend the egg whites into the chocolate and mascarpone cream
  9. Very gently fold the egg whites into the chocolate mascarpone mix till blended; this careful mixing technique retains the egg white’s consistency
  10. Pour the mousse into individual bowls
  11. Place the bowls in the refrigerator for three hrs before serving
  12. Sift powdered cocoa over the top of each bowl just before serving
